Zucchini Boats

  • Cut zucchinis in half lengthwise and trim a little off the bottom so they sit flat in a baking dish.
  • Scoop out the center where the seeds are with a spoon.
  • Brush or spoon the surface with a mixture of crushed garlic, olive oil, salt and pepper.
  • Arrange halved grape tomatoes into the grooves, sprinkle with Italian bread crumbs and bake in a 350 degree oven for about 30 minutes.
  • Remove and sprinkle shredded mozzarella over the top.
  • Place them back in the oven under the broiler until golden and bubbling.
  • Remove and drizzle with olive oil and a sprinkling of grated parmesan.

Streusel Topped Sweet Potatoes

2 lbs. Sweet Potatoes
Salt & Pepper to taste
1/4 cup butter
1 cup brown sugar

Topping:
1/3 cup flour
1/3 cup sugar
1/3 cup brown sugar
6 Tbsp. cold butter, cubed
Pinch of salt
1 cup chopped pecans (Optional--I left these out)

Peel and cube the sweet potatoes.  Cover with water and add salt and pepper to taste.  Boil until tender.  Mix topping ingredients well and set aside.  Add butter and brown sugar to potatoes and mash well.  Top with streusel mixture.  Bake about 20 minutes until bubbly at 375 degrees.

Even my kids would eat these!  I think because there is sugar mixed in with the potatoes it makes them extra yummy!  :)
